How can I install this theme to look similar to the demo? I have bought a lot of themes in the past and they all have clear instructions and a layout grid to show what module positions are where and also any module specific CSS.

Is there anything like this for Omega Theme? I am a little dissapointed at the moment...

In all of our template packages included demos package (quickstart demos package) and you can use it to have a full site like our demo. See tutorial here.

Not of all but many packages include documents tell you about demos package installation, template and extension installation & configuration. In document will have template's positions structure and guide for each module.

You also can find the positions detail in each template introduction article.
