Cant click dropdown items as they disappear quickly

It's not just a case of editing the parent item as is need to do that on every menu item? It's a global problem, the submenus are really hard to click...

You did wrong way, you must edit parent menu ITEM of dropdown menu not MODULE OR PLUGIN.

1. Edit menu item: "Safe Power Solutions" and find on the right site(Parameters) you will see "OMG Menu Options"

2. Uninterruptible Power Solutions do the same above.

OK I see, that works well, BUT, if you now mouseover Safe Power Solutions and then mouseover the fixed wiring dropdown, another menu items slides out to the side, I cannot click on that for the same reason, it disappears quickly..

You can edit "Fixed Wiring" menu item and set "Margin of sub-menu box (px)" to 0 at menu parent parameter "OMG Menu Options"

So I would need to do this for every single menu item? That's not good..
